Gajar ki kheer or carrot kheer a delicious dessert .
Ingredients:
1Cup Carrots (peeled and grated)
21/4 Whole Milk
1/2 cup sweetened /non-sweetened Condense milk (here i am using sweetened condense milk)
5-6 Almonds (soak it in water,peel and cut ito small pieces)
5-6 Pistachios (Remove the shell,boil in water for 2-3 minutes ,drain the water and cut into small pieces)
2-3 threads of Saffron (dissolved in 3tbs of milk)
10-15 pieces of raisins
1tsp cardamom powder
Method:
1.In a wide open heavy bottom pan add whole milk and allow it to boil for 15 min at low flame and Stir often till it boils as it might burn the bottom.
2.Add grated carrots and allow it to cook for 15 min and stir often .Make sure that bottom is not burnt as it spoils the taste of the kheer.
3.After the carrots are cooked add condense milk .
4.After 2-3 min add almonds,raisins and pistachios and cook for 5 more minutes.
5.Turn off the fire and add the saffron and cardamom powder. Stir well.
6.Allow the kheer to cool and garnish with almonds or silver vark (chandi ka varak).
7.serve the kheer warm or cold.
