Mouthwatering Malpua



INGREDIENTS:
 1 1/2 litres Milk
50 grams Mawa (khoya), grated
 3 tablespoons maida
1/2 teaspoon Green cardamom powder
Ghee for shallow frying

For sugar syrup
 2 cups Sugar
 Few strands of Saffron (dissolved in 1tbs of milk)
 15 - 20 Chopped Pistachios

METHOD:
 For Sugar Syrup:
    1. In a large pan, add water,sugar and bring it to a boil.
    2. Stir the syrup until the sugar is dissolved.
    3. Let the syrup boil  till it forms a one thread consistency then remove it from the heat.
    4. Add cardamom powder and saffron mixture.
    5. Set the syrup aside.

For Malpua:
1.Boil milk in a heavy-bottomed pan.
2. Reduce heat and simmer till it is reduced and reaches a coating consistency.
3.Remove from the flame and add grated mawa and mix well. Bring it to room temperature.
4.Add maida,green cardamom powder and 2 tablespoon sugar to the reduced milk and mawa mixture.
5. Mix well and make a batter of pouring consistency using a little milk if required.
6.Heat sufficient ghee in a wide mouthed flat-bottomed pan. Pour a spoonfull of batter to form a pancake.
7.Cook on slow to medium heat then turn it over when it starts to colour slightly.
8.When both sides are done, drain and dip in the sugar syrup.
9. Remove the malpua after 1 min and Malpua are ready.
10.Garish the malpua with pistachios.

Note: You can garnish malpua with 1tbs of rabdi ....it tastes great
