Hummus

Hummus is one of the more popular Middle Eastern dips. Served with fresh or toasted Pita bread .Hummus makes for a great snack or appetizer. Tahini is an important part of this recipe and cannot be substituted. However, it can be omitted (Here i haven't used tahini). 





Ingredients:
2 Cups well cooked drained chickpeas (save the drained cooking water)
1/4 cup extra virgin olive oil, plus oil for garnish
1 cloves garlic, peeled, or to taste
Juice of 1 lemon, plus more as needed
Salt and freshly ground black pepper as per taste
1 tablespoon ground paprika, or according to taste 
Fresh parsley or Coriander leaves for garnish


Method:

  1. Put the chickpeas, oil, garlic, and lemon juice in a food processor or a blender , sprinkle with salt and pepper, and begin to process; add chickpea-cooking liquid or water as needed to produce a smooth paste or puree.
  2. Serve, drizzled with some olive oil and sprinkled with a bit of paprika and some parsley.

Green chutney

Ingredients:
9-10 strands coriander leaves
Few mint leaves
3 green chilies
1tsp ginger garlic paste
1tsp lemon juice
Salt

Method:
Grind all to a smooth paste with little amount of water . Do not make too watery.

Dry Garlic Chutney




Ingredients:
2 tbs chopped garlic
1/2 cup dry grated cocnut
1 tbs Red chilli powder
1/2 tbs dry coriander seeds
Salt to taste

Method:
1.Combine all the ingredients in a grinder and grind till it forms a coarse powder.
2. Transfer garlic chutney to air tight container or Ziploc bag and use as required.

Guacamole

Guacamole is a Mexican dip has avocado as its main base. Avocado is considered as one of the healthiest food because it contain all the essential nutrients required in a daily diet.I had guacamole for the first time in NY at Chipotle.It is a yummy creamy dip and you will love it.




 Ingredients:
   2 Avocado(ripe)
   1 Medium sizedRed onion (finely chopped)
   1Garlic pod (minced)
   1Tomato (finely chopped)
   2 tspLemon juice
   2 tsp Sour cream/yogurt
   1 jalapeno (seed removed and finely chopped)
   1tsp Cilantro (finely chopped)
    Salt to taste

Method:
   1.Cut the avocado into half. Remove the pit and scoop the pulp into a bowl and mash it with a fork.
   2. Add the onion,garlic,lemon juice,jalapeno,cilantro,tomato,sour cream or yogurt and salt.
   3. Mix properly and Gucamole is ready to served.
   4. Enjoy with tortilla or any chips.
