Hummus

Hummus is one of the more popular Middle Eastern dips. Served with fresh or toasted Pita bread .Hummus makes for a great snack or appetizer. Tahini is an important part of this recipe and cannot be substituted. However, it can be omitted (Here i haven't used tahini). 





Ingredients:
2 Cups well cooked drained chickpeas (save the drained cooking water)
1/4 cup extra virgin olive oil, plus oil for garnish
1 cloves garlic, peeled, or to taste
Juice of 1 lemon, plus more as needed
Salt and freshly ground black pepper as per taste
1 tablespoon ground paprika, or according to taste 
Fresh parsley or Coriander leaves for garnish


Method:

  1. Put the chickpeas, oil, garlic, and lemon juice in a food processor or a blender , sprinkle with salt and pepper, and begin to process; add chickpea-cooking liquid or water as needed to produce a smooth paste or puree.
  2. Serve, drizzled with some olive oil and sprinkled with a bit of paprika and some parsley.
