Rabri Recipe (Quick n easy)

Ingredients:
2 cups of  Evaporated Milk(approx.16 oz)
2 cups of  Ricotta Cheese (approx 15-16 oz)
1/2 cup Sugar
5-6 almonds (blanched and finely chopped)
5-6 cashew nut (blanched and finely chopped)
5-6 pistachios (blanched and finely chopped)
1/4 tsp Cardamom powder
 5 to 6 Saffron strands
 1 tbsp Ghee

Method
   1. In a wide pan melt ghee and add ricotta cheese and mix well.
   2. Continue to cook ricotta cheese over medium heat for 10 to 15 minutes or till all the liquid is       evaporated and forms a dough (like khoya consistency).
   3. Slowly add evaporated milk in ricotta cheese,while stirring and mix well.
   4. Add all finely chopped nuts and saffron, mix well and simmer over medium heat for 5 minutes.
   5. Add sugar, cardamom powder and cook for another 5 minutes.
   6. Serve hot or chilled.Or eat with Malpua .
